It is the fat part contained in cocoa beans, extracted and refined to deprive it of unpleasant aromas. Particularly suitable for processing chocolate, sugar pastes, to dissolve the liposoluble colors that can be used in brush or spray coloring. In chocolate it makes the mass smoother, facilitating some types of chocolates and pralines processing.
